Forget the Burger Grading Rubric
First assess tenderness—
a category that transcends
general presentation/plating aesthetics,
burger-to-bun, bun-beef quality,
cheese meltiness and the relevancy
of toppings. Which leaves the sum
is greater than its parts
and the relevancy of sides, but aside
from what’s left out, dive in—
into the hot American,
the warm, ground patty
sandwiched by soft
white roll and go down
and down, make it last. Roll each bite
in the mouth, koro-koro,
as the Japanese say. Award a 10
for succulence, for flavor,
trump what’s left of your
intangibles. Relay the power
of savor.
